Cranberry Cheddar Shortbread w maple glaze and crispy bacon

3 sticks of salted butter

1 cup sugar

2 tsp vanilla

3 1/2 cups flour

3/4 cup chopped dried cranberry

3/4 cup shredded sharp cheddar cheese

3/4 cup cooked bacon finely chopped or crumbled

cream together butter, sugar and vanilla

mix in flour 1 cup at a time - add cheese and cranberry

divide dough in half flatten into a disc between plastic wrap and chill for 1 hour

Roll dough into 1/4 thickness cut our shapes and bake 350 for 8 to 12 minutes depending on the size of cookies small cookies 8 min, med size 10 minutes- large cookies take about 12 minutes or till slightly golden on the edges

cool and ice with maple royal icing sprinkle with crispy bacon

Maple Royal Icing
  • 1/4 cup room temperature water, plus more as needed
  • 1/4 cup pure maple syrup, room temperature
  • 2 1/2 tablespoons meringue powder
  • 4 cups Dixie Crystals Confectioners Powdered Sugar
  • Remove cookies from oven, place on a cooling rack and allow to cool completely.
  • For Maple Royal Icing, blend together the water, maple syrup, and meringue powder. 
  • Pour into a large mixing bowl.
  • Sift powdered sugar over top
  • Stir until well combined, then beat on medium speed using an electric mixer until glossy and smooth, 2-3 minutes.
