Pineapple Rum Jam

Ingredients-

1 fresh pineapple peeled and diced

1 split vanilla bean

2 Meyer lemons zested -plus the juice

1 1/2 cups brown sugar

1 cup rum

Place all ingredients in large sauce pot and simmer on medium low - for 45 - 50 minutes until the liquid is reduced to thick syrup- remove vanilla bean and use a hand blender to blend into a smooth jam or leave it chunky... if thats your jam:-)
